His Chilli thread is driving me nutz. Its been between 30 & 50 degrees at night so Fall it is. What is everyones Favorite Fall Dishes?
Is there even a change in what the California people start making?

My Favorite Fall Dishes are

A-corn squash
Chilli
Gumbo
Beaf Stew
Goulosh

I'll go along with you on all of those and add butternut squash. We also start making soups more often and using the oven once in a while :-D

Alot of Soups. Does that meen that every-one is also trying their hand at Home-Made Breads to Dip and Sog em up with?

We do a Dill-SourDough
and of course Corn Bread

Which reminds me of another.

Chicken and Dumpling Soup. We allready did Chicken Pot-Pies "They Rock"

Nothing much in CA changes - We just have to heat the pool, and put on long pants....

Chili, Chicken and Dumplins, Various Soups and Pi$$ghetti, as some grand children say:0) Of course, they all have to be made from total scratch!!!! (I'm certain there are more but will not think of them til the time arrives.)

Brunswick Stew, Beef Stew, Chilli, Home Made Veg. Beef Soup and BBQ. It gets cold here, but not cold enough to stop Que'ing.

Lots and lots of soup. My girls LOVE my chicken noodle soup. Kaylin will eat 3 big bowls and then take some to school for lunch.

Baked Ziti, Jambayla, risotto, all the heavier italian dishes, of course sitting by a warm smoker at 3am superbowl morning is a good thing, but I guess that winter.

soups stews Italian dishes. But my favorite is Home made Onion soup with toasted parmasan cheese bread. Yum yum !!!

Cajun anything, Soups, Chili, Kraut and Sausage, Fried Pork Chops and Fried Apples with Mashed Potatos and Cream Gravy,

BTW - It will get in the 30's...? BFD!! It will get in the 0's here by January.

I wont see fall until Dec.
It was 40 deg when I got in the truck this morning!
A yummy fish chowder, maybe a little lobster in there too. I'm ready.

Fall is my favorite time of the year.

Chili, jambalaya, chicken & dumplins, lasagna & other italian baked dishes.

And Thirdeye's wife's Chili Verde!!!!!

Sausages, Sauerkraut, and Plenty of ICE COLD BIER!

Octoberfests and Fall/Harvest Festivals rock!

Cooking wise, I have to agree that the hearty soups are the best. Chili, Gumbo, Jambalaya, and my favorite: Ropa Vieja. Cuban beef stew, translated it means "old clothes."

We'll be in the 80's again later this week. Soak it up while you can! (The LL Bean Christmas Catalog came last week....)

Chili has to be the ultimate fall food. My wife amde some on a cold rainy night last week. I love her recipe.

Last night, took a 1/2 acorn squash
put a thin layer of Brown Sugar
Then another thin layer of JD Maple Sausage.
Roasted for about 1 HR
I have to agree with most that Fall is the best time of year.

Sounds YUMMY---but having trouble with the "visual" here :oops:

Was the acorn squash still in the "skin" or removed and layered with the meat?

Pics by any chance?????

It was still in the Skin Roasted almost like a stuffed squash. I only used a 1/2 inch layer of sausage cause I thought more would get too greesy.
Turned out awsome.

No change here in So. Cali. Maybe like Rocke said some long pants. The menu stays the same we might just not cook outside as many nights as we would during the summer. We don't get the Monsoon and snow.
