View Full Version : I do not like my UDS or Rancher Charcoal

1. It's to easy, all you have to do is put charcoal in, light it, when it gets up to about 250, put meat on, after a couple of adjustments on air intake it levels off to 225 0r 230.

2. Then what do I have to do? Check on it every couple of hours. Turn meat, spray or mop. Is it burning, H## no.

3. I cut my yard, which takes about 6 hours,cut, weed eat and whatever you can do to a yard. Man, if I had a smoker that I had to tend to all of the time my yard and honey do's would pile up.

4. And another thing, that rancher charcoal, I put a full basket in at 9:30 am and after the football game ended at 11 pm it was still at 225. I closed all air vents. This morning I was going to dump the ashes, right, there wal 1/2 basket of charcoal left.

5. I cooked a perfect brisket acording to the eaters. No I do not have photos, I didn't have time!! to take them.

6. I want to grumble and fuss with temps, the right wood, hot spots, cold spots, you know what I mean.

7. This is way to easy. I need to relax more!!

Sounds like you need to bring that old UDS over the state line and I'll hook you up with something that will keep you occupied:biggrin: , and where the heck are you getting Rancher at? I can't find it anywhere around here.:twisted:

Well I'm with you on the UDS-so much that I sold my New Braunfels Offset that I was so proud of after modding and refurbing it. I don't have time to babysit that thing every hour. I wish it and its new owner great Q'!
The jury has delivered the verdict on the Rancher though, not in my drums! Reserved for the WSM's

Well, you're doing it all wrong anyways!! you're suppose to get a good book, preferably a queing book, get a cool drink, and take a nap!! Don't let our wives hear we have all this "spare" time when cooking! LOL!!
AND PICS, always come before mowing and before you start the weed eater! or before you lie down, and when you go get a refill!:-P

Supposed to be some in Shreveport HD still, loads in Houma and Lake Charles

Rancher Charcoal ,is what it is CHEAP, to much ash flow and falls apart!,cookers well we can chat all day!! use what you like and dont what doesnt work for you!!! I like my Bullets and my kingsford,,


p.s. yes i have used Rancher, and @ 2.99 it is a bonus buy!!!
Target is clearancing KF at 1/'2 price!! bought 12 bags!!

hey, one thing I've been wondering - do you put wood chunks in a UDS? How do you get a smokey flavour? Does it come from the charcoal otherwise?

Yes, 3-4 fist size chunks...

Yes you add wood chunks but you will also get flavor from the juices dripping into the fire.

Lizzy dog I spent 4 1/2 Hrs yesterday nursing my weber 22.5 to keep the temps between 210 and 280 for ribs that looked great tasted great but were not meat slipping off the bone great. I just can't wait to have your problem:wink:

Rancher works just fine if you do not have to stir or shake fire ring or open the lid too fast.

Now listen up, do not tell your wife or whatever that you do not have to babysit this UDS. They will have you doing all kinds of s^^^.

Women do not like for you to have free time on your hands.

Now some of you young guy's might not have a problem with this, but some of the older ones around here know what I am talking about

I have a mod idea that just might save even more time in the looking and turning of the meat.

I think I can get back on track with my other half by making these mods. You see I can tell her that I have to watch more closely and I will not have honey do's piled on me.

You might even have time to take some photos.

As a self proclaimed member of the Older One club, I agree 100%! Don't tell her the UDS is worry free. If she is watching what you are doing too closely, tell her a buddy needs some help with his car, and go to his house to drink beer and watch football, instead of trying to do it at home. If she see's you too relaxed, you will be cleaning out a closet or painting a room before you can say "Royal Oak".

I personally would recommend your scorch the crap out of whatever you cook next, and then tell her you will need to pay more attention to it in the future to avoid another mishap. Then the next time after you put you meat in for the slow cook, you will have the rest of the day to yourself.

Well, what you need is a big old trailered offset... Then, when YOU want to tend the fire, you can.... When you have other things YOU want to do while cooking, use the UDS...

I hear you. At the usc game/tailgate I was a promised a full 6 1/2 hours to cook everything. As usual, the hangovers, ATM, chits, forgotten necessities, and Starbucks only allowed me to have 3.
No problem, opened up all the vents and cracked the hood and that thing cookin like a convection oven at 350. Meat turned out damn good too!
UDS is gods gift to us.

Drums the only way to Que!!!! I'm thinkin about gettin rid of my Brinkman Pro and add another drum to the space it left!!:-D
