Since I have whatever I want at my beck and call as I leave the store at night, tonight will be prosciutto de Parma. This is made specifically for boar's head and is 12 year aged indulgence at it's best. Having it with a couple of Boar's head cheeses and some crackers. YUMS!

Vermont Cheddar and their baby swiss. This stuff is just fantastic. I can't get over it. Coming from small town America, I never had a clue what a real deli was like. I can only hope that I am doing them justice with the products that we carry.

Oh, just for the heck of it. The pig that I just finished eating died 12 years ago to make my snack. Pretty cool stuff huh?

Yes or with fresh mozzarrella !

Also, wrapped up with canteloupe is very traditional for Italian families or restaurants as an appetizer !!

yeah I usually go to a great Italian deli and get the good imported stuff. but you know the farther away from NYC you get the harder it is to get and Boars Head is a whole lot better than some of the stuff you get.

I am also a huge fan a a really good dry spicy soppresata. both are standard fare at any gathering at my house.

Also, wrapped up with canteloupe is very traditional for Italian families or restaurants as an appetizer !!

We usually do melon balls though instead of slices. That sweet salty combo.....not much better than that

I'll check today. I was just quoting my partner. He has been known to read stuff wrong. It isn't the regular boar's head. They have more than one.

Boars' Head is the best. They were one of my best customers, they have a big plant near your "new location" Bill, one near me, one outside of Memphis, I think one in Chi-town, and two on the left cost. Several of their products are rated number one in the industry even over imported cheeses. They however use a steam-smoker to inject and cook the meats with flavor. They follow this by a slow cook with a normal smoke. The reason for the steam-smoke is to keep the smoke ring from showing and to ensure the food poising is reduced.

I said "think" I know I flew into there, I don't remember were I went to after. I don't even remember if it was Boars Head today.
