Marinated Flank Steak for about 6hrs.

So easy to make, so darn good.

Whipped up some Chimichurri just before putting the steak on the grill.

Served with Black Beans and chopped Chipotle in Adobo, Cilantro Lime Rice and sliced Avocado.

I was expecting to see skirt or flap meat for the carne asada, but see you opted for a thicker cut with flank - nice change of pace, Kevin!

For a 1.5# flank steak
1/2 cup chopped fresh cilantro leaves
1/3 cup olive oil
1/4 cup reduced sodium soy sauce
Juice of 1 orange
Juice of 2 limes
4 cloves garlic, minced
1 jalapeno, seeded and diced
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper, to taste

1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems
4 garlic cloves
2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano)
1/3 cup extra virgin olive oil
2 tablespoons red or white wine vinegar, I use red.
1/2 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes

Finely chop the parsley, fresh oregano and mince or chop garlic. Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes, adjust seasonings as you see fit. I chop and mince but you can use a food processor.

Next time I'll probably add 1/2 cup of chopped cilantro.

I find red wine vinegar works best, yours looks perfection!.
