I was at Costco and happened across a bin of O’Brien corned beef flats that looked really nice. The packages were marked “choice” but it’s rare I see this level of marbling and fat striation even in prime. Doing a two day soak out now and then I’ll be smoking it on the Mak 2* for some pastrami action this coming week.

Those are nice, it's good to see that not all corned products are low grade.

I may have to go pick up another one if they still have them, not bad @ $4.49/lb IMO

That is a nice looking flat. I picked up one yesterday to cook on Wednesday, since the wife is out of town and corned beef is not her favorite, I can finally celebrate St. Patrick's Day like it should be celebrated. It wasn't as nice as yours, but I will enjoy it. Can't wait to see your cook!

Nobody in my house is a fan of corned beef or pastrami either, which is just fine by me. More for me!

Great looking flat! I’ve seen Wagyu with less marbling than that.
I picked some flats and points for $2.50 lb today. They were loading.

Kind of what I thought, similar marbling to the last couple wagyu briskets I’ve cooked.
