Today’s smoke. Duroc St Louis ribs. Just Real Kosher Salt And Coarse BP. Seasoned and sitting in fridge for an hour while I go hike the Urban Jungle. Winds gusting up to 35-45 which will have zero effect on my cook or cooker due to position of my patio and direction of the winds.

Looks like a good plan. Careful you don't fly away on your hike.

I just sight it. Aim (swag) for 2+ parts pepper 1 part Kosher salt.

Great minds think alike, have 2 racks of Duroc spares in the freezer, was thinking to myself this morning I needed to pull a rack out for a cook later this week. Was planning on going with fresh course cracked pepper and course sea salt. Sometimes you just want to enjoy the taste of rib meat and not have them all doctored up with rubs and bbq sauce (not that there is anything wrong with that). Duroc is a great tasting rib on it's own imo.

One of these days I’m going to smoke them without anything. I see the shows where Carolina folks cook pork with just real wood coals & smoke. Someday. Actually ought to do it now. Boston Butt is 0.97# right now

That was my last pork butt cook. Just salt, smoke, and time. Some of the best pork 'cue I've made in a long, long time.

I'd be interested in trying John's Lexington NC process on a rack of Duroc spares sometime.

Well, I left the ribs S&P whilst she makes quiche in the kitchen zone. Restocked Cervesa with a Shiner12. We good.

Yes she was fine. She had bought a bottle of Keto Friendly BBQ Sauce. Kinders. I tried it and it was good. Not honey butter Stubbs sriracha good, but really pretty good. She ate more for supper.
