Many of you might remember that both my wife and I are on Weight Watchers right now. We both agreed to throw caution to the wind for Christmas Eve dinner. My wife’s favorite meal is Pot Roast so when I asked her what she wanted me to make, this is what she wanted. Now My version is slightly different that some that I’ve seen out there, but this was absolutely delicious and was so worth the temporary indulgence.
I got this huge and beautiful 5.76 lb. Chuck Roast at my local Winco. Who knew they had this nice of a cut of Chuck and for only $4.98 a lb. (Cheaper than on sale at most of my local markets)

When I said huge, I mean “Huge!”

I generously coated it with salt, fresh ground black pepper and then patted in a coating of flour. I then placed it out on my counter and let it come up to room temperature.

While that was happening, I gathered up most of the rest of ingredients. (Note: I ended up not adding the pearl onions)

This piece of meat was so big I had to buy a larger D.O. just so it would fit. When the meat was ready, I melted 2 tbsps. of ghee and let it get smoking hot. I then placed in the roast and listened to it sizzle.

Once it had formed a crust, I flipped it over.

While that side was browning, I got out the veggies I had cut up the night before.

Next I browned the edges.

I then removed it

and poured in some mirepoix and let this start to sweat.

I then added some flour and mixed it in.

Now I poured in 1 - 750 ml. bottle of Cabernet Sauvignon to deglaze the pot.

Next, I placed in the tomato paste, 2 tsps. of beef base, 1 cup of water, 2 cut up onions, 2 bay leaves, 6 sprigs of fresh Thyme and 4 sprigs of fresh Rosemary.

I then put on the lid and put this into my kamado preheated to 250 degrees.

While this was slow cooking, I brought out the carrots, celery and shallots.

After approximately 2 hours and put in the carrots, celery and shallots and cooked this another 1.5 hours.

I check the meat to see if it was ready and it was. I removed the meat to a large 16” x 10” platter.

I then scooped out most of the veggies into a large 11” bowl.

I had already brought out the other side dishes of mashed potatoes and Roasted Brussel Sprouts, Delicata Squash w/ Bacon Cranberry Pomegranate Dressing.

Now we ate out on our patio that night, so that we could try to conform with our states mandated regulations, so we used paper plates that night. This was my plate.

After dinner we all went into the living room and opened gifts and took some pictures.

To say this was delicious is an understatement. One of the best meals I’ve had in quite some time. The meat was fall apart tender. (I served it up with tongs, no fork or knives required) The gravy was thick and beefy. The carrots were soft but not mushy. This may well be my new favorite meal!
