I've been itching to buy a new slicing and a boning knife for some time now. (Not that I don't already have a load of knives.) Looking at the Gunter Wilhelm line. The slicer is on "sale" for $80 and the 6" boning for $30. Do any of you have their knives or know of someone who does and what is the opinion. Is there a better knife for the same price elsewhere in these two categories? Thanks for any advice, opinions and direction.

I've had this set now for 10 years. Good build, solid quality and feels great in the hand. Lifetime warranty and I've replaced the 5" utility knife once because it broke in half. They gave me a little crap about it but did replace it.

I now find that cheap german steel knives to beat on work for me better. Especially now that I have the Ken Onion Workshop sharpener. For slicing I prefer and use a granton edge 14" slicer.

Certainly better on the pocketbook. Something to consider. Thanks for the response.
