View Full Version : More Sunday Night Wings (on the 26 inch Weber kettle!) - w/ Pr0n!

Last Sunday's results were pretty good, but not "up to snuff" with the Vortex in the 22" kettle.

Walked out back to get the kettle going to discover some folks flying their hot air balloon over the city (Sandia Mountains in the background).

Filled the Vortex pretty full this time and really let the whole thing get glowing before I even thought about bringing out the bird.

This time around, I've got mild rubbed wings on the left that are for Jamaican Jerk Wings (and we'll keep a couple nekkid for the munchkin), Wicken Yanks rubbed wings on the right for smoked buffalo, and I'm taking advantage of the real estate with some thighs in the middle that were marinated in Charlie Mills E NC BBQ Sauce, then rubbed with Everglades Cactus Dust (rub tastes just like a BBQ potato chip, per CINCHOUSE).

Thanks, Sako. Got her up to 400F and held for most of the cook. 350-375F at the lowest this time. Getting the hang of her.

I think those chicken thighs are destined to be Monday night dinner with the black-eyed peas and Parmesan or cheddar risotto (apparently, we have some of both).

Wing Shenanigans on the 26? Nicely done. Vortex + Any Chicken Parts = Amazing!!!

Want to change a variable for next time? Toss an onion (halved or quartered; any color) on the coals, before you put the grate down. Can't take credit for it, but will kindly pass that one on to you...:wink:

An aside: you might see some discoloration on the cook grate right above the vortex over time (even though it's SS). I've definitely noticed it on my 26. I currently use the vortex with the GBS (center out) in the 22 and life is good. I've noticed similar discoloration on the 26 grate above the SNSXL when it gets rocket hot. I just rotate it every other cook and scrape. Seems to work itself out.

Cook looks awesome! Vortex makes great wings or other chicken parts. That 26 sure has a lot of room.

Did some wings last night too. Wife wanted spicy. SPOG and some Slap Yo Momma, then brushed half with some Tabanero XXX Spicy. They were almost too spicy to enjoy. Almost.

So what's special about the vortex. I get the same results on my 26er using the provided charcoal baskets. With a full chimney starter full of coals and a couple of chunks of wood.

I've tried the provided baskets. Not even close.

Plenty of threads on the subject 'round here. My 2 cents below.

High indirect heat that creates a vortex (yes, a Vortex) of hot air (much like a convection oven) in the kettle that does a great job of crispy chicken skin and tender meat.

Vortex not just good for bird, cooking from the middle of the kettle. I thoroughly enjoy using it for steak or sausage or hotdogs or stuffed mushrooms... offset in the kettle.

Hope that makes sense.
