just picked up all the things needed to put together a peidmont water pan for my WSM. GOt it put together. only thing i couldn't find was the copper tubing for the spacers. i used another piece i found in the plumbing area, a 1/8 threaded mip (something another) looks like a connector for 2 joints. the #10 1" bolts and a couple of wing nuts. 5 min later. have my pan. what can i expect to see as far as temp stabilization, compared to using just the one ecb charcoal pan mod?

Works the same as placing a layer of HD foil over the pan with an air space to the bottom.

You're going to have to keep a closer eye on the temp in the beginning as it will tend to run hotter. It will be important to shut down the vents early or you'll risk blowing by your target temp. Once that happens, it's tough to bring it back down. If you can get the temp under control early you should be set and you should experience even longer burn times for a load of coal.

Personally, I've done away with the piedmont pan mod. The thing just tended to run too hot. I've switched back to the ECB charcoal pan and I'm fine.

Good luck to you, though!
