Added “rib chops”. Interesting cut -Really good. Bone structure is interesting. Separated meat and chewed bones (Pitmaster Privilege) meat tasted like low fat BabyBack Ribs

Great cook! That’ll hold you over for a spell. What temps are you cooking at? Mine seems to like 250.

I’m not sure. Estimate 260-290 as thermometer said 230. When lump was glowing at starting points- one bottom vent closed other two half open. Exhaust wide open. Cooked in pans. No water pan nor deflector plate.

Some of Lillies are pretty good. In that mustard sauce the Allspice really stood out. Didn't really care for that note in there.
