If you were shooting to slice your brisket and it's slightly overcooked and it won't do the bend pull test... do you see that as a great disappointment if you have to chop it?

I'd say that's a win. You probably won't need to do a lot of work chopping.

No. It is just chopped. That is what my sis n law requested when I made a brisket several months ago. I was a little disappointed to chop but it was her brisket for out party. I ended up actually over doing it a little, but I wasn't at all disappointed how it came out! Still flavorful and juicy! I was getting good reviews from the whole family about it...I didn't think it was THAT good?

No shame unless you nuked it into a meteorite and just can't reconstitute it back into some sort of edible creation.

A friend of mine cooked his first brisket recently and he asked me for advice. I gave him all of the pointers I could. The biggest advice I gave him was not to get too upset if it didn't turn out great because the meat can always just be chopped and sauced. I have had my share of briskets that ended up chopped instead of the perfect slices I had in mind when I bought the meat.

Brisket is brisket. As long it is edible, I don't care if it sliced or chopped ...

Small dissappointment...but way better than under cooked...tough and dry.

Actually some of my peeps like it a lil crumbly...saying how tender it is.

I overcooked one a few fourth of Julys ago. Chopped and mixed in some au jus and bbq sauce. The guests were not bbq savvy and didn't even know it wasn't supposed to be that way
