I recommend going to Martin House Brewery and Heim BBQ for a real fine time in Cowtown. Took a group from work there last year and everybody loved both places.

Heim recently opened another restaurant in Dallas.

Impressive video. So... a beef shin (shank) is the equivalent to a pork shank, which are somewhat available. The video mentioned a combination of braising and smoking was used to cook the beef shin which is the same drill used for a pork shank.

Full pork shanks are not that expensive and pretty tasty, but I'd like to try out the beef version.

I believe any meat with bone that is not braised has a wonderfull stickyness to it

Yeah, it looks like they are cooking a cut more akin to a leg of lamb, only bigger. A lot bigger.

But this has made me get a couple nice lamb shanks out of the freezer for tomorrow night. I get so much inspiration for meals here. Tonight is Chilean sea bass or I'd do it then.
