Early plan for turkey day

Our family will be having a large Thanksgiving reunion at the daughters house about 3-4 hours away. I am considering taking a smoked turkey. There will be the usual roasted bird and ham. My thought is to smoke the bird days earlier, carve it and vacuum seal the meat. Freeze the meat and carry my Sous Vide to location for serving. Any problems you can foresee?

You can reheat in a pot of warm water and save hauling your machine. I smoke my turkey breast and slice way ahead of time. No complaint ever filed.
