Let's say you overslept and don't have 5 hours to smoke the babyback ribs that you promised everyone. How would you cook them to get the cook time down to around 3 hours? Asking for a friend. :caked:

300+ cook temp will probably get you there in 3 hrs, and wrap half way through for even faster finish.

280-290, bare for 1.75 hours. Wrap in foil with liquid 45 minutes to 1 hour, out of foil 15 minutes to reset bark. Just did 2 racks yesterday. Done in 3 hours.

Big fan of this one. It's generally my go-to.

Finish them in an Instant pot on a rack.

Finish them in an Instant pot on a rack.

Interesting idea - I've had good success with this "pressure finish" for homemade pastrami.

Do you do high or low setting, and what's your ballpark timing to make sure they don't blow into/past "fall off the bone" tender?

I guess that really depends on how far along they are before you put them in the Instant pot.

I would say 15 minutes if your worried about them falling off the bone.

As far as settings, i always use the default manual setting.

Liquid smoke in a microwave will have those suckers done in less than 20 minutes. :thumb:

Put on smoke for an hour at 225. Wrap in foil with liquid of choice then put on grill/oven/gasser for 1.5 hours @300. Removed from foil and back on grill to finish with sauce and get the exterior to firm up.

I could knock out a rack of ribs in about an hour on the wood fired rotisserie drum

Absolutely!

I've actually done a rack of BB's in under an hour on more than one occasion on the Weber kettle using the roti as well. If given the choice, it's not my preferred method, but they were very good and it was great to have them done so quickly when time was of the essence.
