Entertaining a couple friends on Friday evening for dinner. I'm going to take the afternoon off to cook and prep.

We are all foodies, and like trying new things. Any fun pork based recipes? We've been doing a ton of beef lately, and I don't want to just to baby backs.

Open to any and all ideas!

Since you're taking the day off. Pork Belly! Need to cook it for quite a while to render a lot of that fat out. Sear then cook, or cook then reverse sear, or burnt ends, it's all good.

Pork Belly burnt ends are one of my go to things for appetizers. I've only got the afternoon to smoke so 5 hours give or take. Might do some burnt ends as a snack though. I'm already getting hungry!

St louis style pork steaks, jerk marinated pork steak or butterflied tenderloin. You could also butterfly the tenderloin, then add some jalapeno or poblano peppers and cheese in it and then wrap in bacon.

I second pork belly burnt ends!

Hello to another CO member. I just tried this last weekend. If you don't like apples, some roasted hatch chilies would work very nice as well. In any event, here's the rundown of my attempt:

I ran across a Baguette PTL wrapped in bacon. I only saw pictures of it and nothing about cooking temps, time, etc. So, I went with what I thought would work. I know Pup is picky so I wanted to share. However, here is the process:

I put some hot salsa on the Baguette:

Then, some sliced apples and some swiss cheese:

Then the PTL and repeat:

The last part is a bacon weave. I have never done one and it was a little tricky to work with but it all came out ok.

I put it on the smoke at 225? with apple wood. After an hour, I checked it and the bacon seemed too slow. So, I raised the temp to 250?. One thing I did wrong here was not using a leaner bacon. The bacon I used was a little too fatty. I did slather some Q sauce on it as well. All told, pulled it after 2.5 hours and internal of 150?.

The funny thing is, I told and showed the kids what I was trying. They weren't on board with the whole apple thing. After we ate, they loved the apples as they were good and added some texture. Anyway, here it is on the way to the table:

Was a little bit of work but certainly worth it. Family absolutely loved it as they went back for seconds but we still had a half for leftovers.

^^^ Jerk pork! Yes. Get some Walkerswood, let it marinate for a few days, grill hot n fast, Good stuff!

I like to take a pork tenderloin and butterfly it and then grill em like a steak. simple, fun and different

Find a butcher that can get you Chuleta Kan Kan. Good chance nobody has had that cut and it was fun for me to experiment with when I tried it. Good stuff too. Ignore the hack job I did when cutting it.

Want something really different? A local restaurant used to do tenderloin medallions with a raisin sauce similar to this, and it was awesome:

Take pork tenderloin and cover it in curry powder. grill it as you would until it's 145. Slice and serve with a mustard barbecue sauce. The Fresh Market's Carolina Gold is great.

Serve cucumber salad as a side.
Peel and thinly slice 3 cucumbers and a 1/4 sweet onion. mix in a teaspoon or so of kosher salt and stir. Place a plate on top of cucumbers and put a big can on top to with it down. Drain after a couple of hours and mix in a cup of sour cream, adding a little at a time until it's the right consistency. You don't want soup, so you'll have to be the judge.

Thanks for all of the suggestions. Some amazing options here! I'm leaning towards doing some STL Pork Steaks as I've never done that.

Just this week - SlickRockStones' Butter Pecan Pork Chops. It would have a pretty wide appeal, too. Sometimes you do something complicated and your guests look at you like you are serving them Klingon food.

Pulled pork offers a lot of flexibility. Tacos, sliders, nachos, wrapped in a wonton and fried etc... etc... It does just about anything. Sor

Grill some country style ribs indirect. While they are getting happy, make a batch of this to baste them with last 10-15 minutes:
FIREBALL WHISKY BARBECUE SAUCE
1cup ketchup
1/2cup brown sugar
1/3cup Fireball Cinnamon Whisky
2tablespoons apple cider vinegar
2teaspoons Worcestershire sauce
1teaspoon garlic powder
1/2teaspoon salt
1/2teaspoon black pepper
1/4teaspoon cayenne powder

Combine ketchup, brown sugar, whisky, vinegar, Worcestershire sauce, garlic powder, salt, pepper and cayenne powder in a saucepan. Simmer for 10 minutes.

I havent done it yet...but Rats pork tenderloin sounds interesting. I found the elephant garlic at Walmart and just picked up some dark soy sauce at the Asian market.

Decided to do St Louis steaks with Smoked Ranch Beans & Green Beans. Smoked up two bacon weaves that contributed to all the beans and a nice Italian chopped salad that my wife made.
