I was going to title this “first cook” but realized I grilled a steak right after getting the Akorn. Then I picked up some boneless beef short ribs last grocery shop, and then it’s been too rainy for me to do any outdoor cooking. Until today. Today was beautiful, so it gave me my chance. Applied rubs (trying a couple of different blends, no preference yet) and let the meat come up to room temp while I built the fire. Built a charcoal snake in the Akorn, three bricks thick about halfway around the firebox. Got a half dozen briquettes started in the chimney, arranged them on one end of the snake, set the deflector, water/drip pan, adjusted vents and waited to build heat. Put the short ribs on when the thermometer showed 200. Probe was saying internal temp was 66, so I went back to work on my Silver Smoker project. Seemed much quicker than expected the probe was saying 163 so I started to prepare the sides. Temp continued to rise quickly so I pulled and wrapped at 169 indicated (uncalibrated probe).
For sides, pan fried local asparagus, and leftover rice pilaf. Deglazed the pan after the asparagus and gave the rice a quick stir fry in the pan drippings. Plated, paired with a local microbrew, Old Bust Head Vixen, Irish red ale. All yummy. And if I get ambitious I’ll be making a Biaquick strawberry shortcake for dessert.
