View Full Version : Indoor Quarantine Cook: TexMex Shepherds Pie

Did a little something different for dinner, TexMex Shepherds Pie!
Since I was balancing Quarantine Homework, I had to do this all inside .

Started off with a blend of Ground Beef, and Ground Sausage, browned in skillet, then added veggies, and some Enchilada sauce:

Next, I mixed up some Cornbread batter, and added some corn to it:

Poured the meat mixture into a baking dish, and topped with Corn Bread batter:

Into the oven at 400 degrees for 25 minutes:

Funny you say that, my next one is going to be a take on Tamale pie , going to use pulled Pork for that one!

Nice take on cottage pie. I guess in Texas the shepherds must tend to cows instead of lamb. :boxing:
