View Full Version : How do you grill a salmon steak with no skin?

Most of my searches result in salmon with skin and the skin side down the salmon I have already has the skin removed. Do I grill it the same way as skin on? First time grilling salmon as usually I have red fish, grouper, red snapper and other locally caught fish.

I will usually cook skinless salmon in direct to desired temperature. If you brine or sauce it won't burn that way.

I season like steak, both sides. Grill high heat about three minutes per side. I use two big spatulas to flip, like this one:

Basically, I cook like a steak. Do like it a bit crisp on the outside and rare in the middle.

I've tried smoking, slow cooking, cedar and salt blocks, but my family always requests hot and fast on the grill.

I have a spatula just like that.. sounds like a good plan.

You could also cook it on a piece of foil or buy a basket that you can flipqithout having the fish touch the grill.

I like to season S&P then use a mayo slather. Never had it stick to grates.

Up here in the Pacific Northwest we do a lot of cedar planked salmon. How ever you cook it though, season it lightly. It’s very easy to over season and smother the taste.

I was goi g to cook indirect but do not have a grill mat. Tin foil will probably be my grill mat.

I'd probably go on grill grates for easy removal, indirect no flip

I normally use just a light amount of sea salt and fresh ground black pepper. And a squeeze of fresh lemon after I take it off the heat. Sometimes I will sprinkle chopped fresh basil on it. Good stuff

If no skin, I sous vide to 130*F. If grilling, cedar plank it. Either way lemon pepper and a couple of lemon slices.

I never turn trout, steelhead, or salmon when grilling. Planking is my preferred method for skinless fillets, but I live in the Rockies and cedar reminds me too much of pine. I buy Alder and Hickory planks.

Next would be using parchment paper, sometimes with a bed of herbs or lemon slices underneath for a heat sink and flavor.

Well I decided to use tin foil and rubbed a little blood orange EVOO on it and seasoned with sea salt, ground pepper, and a little garlic powder. Going to smoke low (160-270) and make some salmon dip.

Outstanding! Mixed cream cheese, 1/2 cup of Blue Plate mayo, sea salt, cracked pepper, chives and a little hot sauce. Tastes great. Made one little bowl with some sun dried tomatoes for a little twist and it was good too!

Cut a big onion into 1/4 inch thick slices, lay them on the grill, lay the fish on top of the onion.
