I have never seen these, Stephanie wanted me to smoke up some shorties. I told here we didn't have any, she came back with these.

Any idea what exactly I got here?

I don't think you'll go wrong with the classic smoke til barked/braise in foil combo. Bet they come out awesome. Never seen that particular cut though.

I'm trying to decide if they removed rib meat from bones or sliced up chuck roast aka country style beef ribs. I think I may smoke a couple and grind the rest for burger

I've seen bone in short ribs from the chuck as opposed to the plate - perhaps they just deboned those.

It's just chuck short ribs with the bones removed. I'm sure you cooked you cooked the ones with the bones before.

Same as that but with the bones removed and then sliced into strips. I buy whole cryovac ones all the time from Costco Business Center.

I think it would be in your best interest to send them to me. I'll carefully analyze them and report back to you. I like to think of it as "taking one for the team" if you know what I mean?

Chuck ribs, in whatever form you find them in, are pretty tasty. To put them in perspective looking at a steer.... chuck ribs are cut from ribs #2 through #5 and in their largest form you will see them in 4-bone racks. They are basically located above the brisket. Yours have the bone removed. They are delicious when ground, but you might reconsider after smoking the first batch. :mrgreen:

Plate ribs are a little larger and are cut from ribs #6 through #8 and in their largest form will be in 3-rib racks. These are farther back on the steer, basically below the ribeye area.

I got some similar ones in a small styrofoam package from the local grocery store one evening for a quick roast with some salt and black pepper. For something that took ~2 minutes to prepare and ~20 minutes to cook for ~$6/lb (bone-in about 4" long), they sure were good.

Beats a frozen pizza every time! :hungry:
