Hi Guys,

Sunday night calls for pot roast. I just seared off this 2 1/2 Lb chuck roast, SPOG and a little Texas post oak for flavor. More to come...

One of the reasons I like doing pot roast is the flexibility of the cook. I usually put the roast in the dutch oven for 1 1/2 hours then add the onion, potato and carrots and cook for another 1 1/2 hours, tonight my wife was late one hour. I just left it on the BGE for an extra hour, no difference....

Yeah, that is a great idea. I never thought of it that way, I do sliders for the superbowl, I think I just added another variety thanks to you. Thank you kind sir!
