Thanks to several threads in the past couple of months, you folks turned me onto Cincinnati Chili and Adams kicked me toward a good Copycat Skyline Recipe (https://www.thechunkychef.com/copycat-skyline-cincinnati-chili/)

After reading through lots of discussion and some good banter, we decided to whip up a small original 4-way + try some in a coney dog format (bunless, as we had plenty of carbs with the spaghetti). I even upped the ante with some hot sauce!

Fast forward to today - Needed some lunch and wanted to clean out the fridge. What would happen if C.C. came to New Mexico?
Well let's start off with a good frank in the skillet.

But, we'll take a hard turn with a quesadilla format. - Sliced dawg, Cincinnati Chili, and Cheeeeese

Over top of that, we'll need some Green Chile Dip and Valentina's Hot Sauce.

Oh, yeah. That'll work! Hope we have some NFL playoffs on the telly at the same quality as we had yesterday! Good Lawd!

Perfect Sunday/football/beer food, which would be great even without the Sunday/football/beer. There is nothing chili can't do! Could an omlet be next? :noidea:

It's interesting.... I can absolutely understand how one wouldn't exactly call this stuff "chili" in the traditional sense. The flavors sure are nice, but I'd much prefer this as a topping or addition to something else... some other vehicle to get it to my mouth.
I'm not sure I could just sit down with a bowl of it and tear into it like I could a traditional chili. :crazy: It's OK. I'm strange.

There was a truck stop in Topeka that served this. instead of Cincinnati Chili they called it Spaghetti Red. It's long gone now but anyone who drove and OTR truck in the 70's and 80's probably remembers getting diesel and a meal at the Topeka Truck Plaza.
