Brined for 8 hrs
Smoked @ 250* for roughly 2hrs
Finished @ 275* until IT of 145*

Brussels Sprouts cooked under pork.

Double cut
Laid over sprouts and turnip/parsnip puree
Finished with a little bit of brown butter.
