View Full Version : Christmas Eve Prime Rib

Our family tradition is the big Christmas meal happens on Christmas Eve, that way we can do nothing on Christmas day. All my kids asked for something other than ham and I gladly obliged with a 9 lb choice boneless Prime Rib Roast from Costco.

I seasoned the night before with EVO and Oakridge SPOGOS (amazing rub!!!) and put it on my UDS about 11 this morning in beautiful 50 degrees Iowa weather. It took just under 4 hours to go to 125 IT. I rested it for 45 mins and finished getting everything else ready and then put it on my gasser for about 10 total mins.

The family loved it. It was amazing! Merry Christmas to all!!!

I forgot to add if any left, cheesesteaks are a great way for the next day lunch...
- thin slice the beef, sautee mushrooms and onions together, when that is done throw on some PROVOLONE only and then the beef on top. Let it ride, maybe flip it..Get a baguette, pull some bread out of the center. Fill up with meat, onions, cheese, and mushrooms. Add juice. Devour.

How you gonna do it, pharp? I hate to say I am doing meat in a 225 ish oven then blaze outside on the Performer. I have scalloped potatoes in mind as well...

Demo, this cheese steak, made from pink delicious meat, perfectly sauteed onions and mushrooms, on a toasted baguette (I pull out some of the inner breading) trashes any cheese steak known to man. The quality I use - my meat and cheeses...and bread... DESTROYS Continentals - been around for 40 years.

I"d be happy to. I'm sure you are right, but in the end, it's still a freaking cheesesteak. The mushrooms, onions, baguette and cheese take up valuable room in the stomach that could otherwise accommodate MORE PRIME RIB. It's just science man :tongue::tongue::tongue:


BTW, I'm eating Carniovre, so I don't do all those things anyways. :razz:

I am going to smoke it until around 100 or so and then hit it with the PK with upside down grill grates!

Here at the lake at noon my temp gauge says 58*, can't say in all my Iowa years here it has ever been this warm on Christmas!!
