Well I have been sick for awhile. Probably bronchitis.
So I am behind and it looks like I have a window. 4am start time if I play my cards right we can have a batch of true blue smoked jerky. No cure. Just smoke and my marinade.
Just a side note: you should cure your jerky. I don't but have been doing this a number of years. No sick folks. I know what I am doing. What I do is considered by many to be dangerous. So if you copy me there is a risk. You do so at your own risk.
I only smoke jerky for Christmas. Its expensive and well its actually a pretty great christmas gift.

Just some pictures of the jerky, my wife, and son.
Tommy is passed out now. He was going to help load the smoker but he fell asleep. He helped mix up the marinade for the first time making Christmas jerky.

Going to have to load ice into the smoker at some point to keep temps down. Anytime the outside temp is above 30 degrees we put ice in the water pan. Keeps it nice and cold but with good clean smoke blowing through.
Anything above an outside temp of 30 use ice in your water pan. Refresh it once every hour. The ice melts fast.
