Hey, I'm looking for a good sausage recipe, something to use up trimmings from mainly brisket n pork butt, would prefer fresh, not cured.

Sounds pretty simple, pork, beef, salt, pepper and cayenne.

Might be a dumb question but what's tenderquick,

Tenderquick is a curing salt. It a mix of salt, sugar, sodium nitrate, and sodium nitrite.

I add cure#1 to my sausage fairly often which is a mix of salt and sodium nitrite. The rule of thumb on that is 1 teaspoon per 5 pounds of meat. I wouldn't go the tenderquick route because of the sugar.

You can't substitute the two so don't try that. Use what a recipe calls for.

This is what I needed guys, a couple good sites to look into, everything I seem to find on the internet is generic and don't sound too good.

I'm getting a grinder with stuffing attachment for christmas so I hope next time I fire up the pit I can give one of these a go. Thanks guys
