Hadn't grilled prickly pear cactus in awhile. I make the fruit into wine and jelly, and usually grill the pads. I have quite a few in the pastures, but picked these pads up at the store.

burned the thorns off, over the fire...

scraped the remaining thorns off with a knife...

washed and ready...

Made my stuffing... (shrimp and pepperjack cheese not in pic)

Fried the Conecuh, onions, scallions, garlic, pepper....

added cubed cactus, the charred corn, mexican oregano, salt, pepper...
cooked til cactus was tender, then set it aside to cool.

Prepared the pads for stuffing...

Used the corn husks to "stitch" closed...

Drizzled with olive oil, seasoned with cracked black pepper and coarse salt...
Onto the grill with indirect heat.

I let em go for about 10 minutes per side, then direct grilled to finish.

Ran my knife around the edge......

Lifted the "lid" and supper was ready.

Served with hot corn tortillas and a cold beer to wash it down.

I liked the addition of the smoked sausage. The cactus was nice and tender too. The pepperjack added just the right amount of heat for me. I'll be making these again. The fillings are endless. :grin:

One of the men that work for me brought some shrimp and cactus tacos to work one day and shared them with us.They were OUTSTANDING! Your dish looks even more delishious.:thumb:

Holy smokes Jeanie! That looks amazing. I've never seen cactus done like that. I bet it is super tasty. I love the stitching as well, it really adds a great visual component. And I had no idea you could make cactus wine either. Thanks for the sharing with us.

Thanks Josh! I thought about using twine, but the husks were right there handy.
My cactus fruit wine isn't fancy. I use a glass gallon jug, lots of yeast and sugar and a balloon on top. lol It's powerful stuff though! :grin:

Looks very interesting, almost looked like Ninja Turtles being cooked.
Local Italians carry Cacti ,never tasted it tho.

I like them grilled, cooled and sliced for salads too. They take on other flavors pretty well.

The darned cactus around here are the reason I have so many flat tires. Might as well eat em. You can't drive into the pasture without 10 plys! :laugh:

I'm having a great day. Deer season started yesterday and I have one hanging.

Thank you Orangeblood! The walls of the cactus pads were so thin, grilling them did away with any slime. One of the reasons I cooked the stuffing first too... I wanted to make sure the sausage was fully cooked and the cubed cactus was tender and slime free before stuffing into the pad. :-D
