View Full Version : Overnight brisket, grill cooled to 180f. Safe?

Hi all

Unfortunately I managed to prove that pellet grills aren’t quite idiot proof.

I forgot to adjust the target meat temp on my grill so when it reached 160f internal it ramped down from 225f to a holding temp of 180f some time between 1:40 am and 6am.

Is this still safe to eat once I finish cooking it properly??
I’m thinking it’s fine but paranoid.

Absolutely safe! :)

As long as internal temp was above 140° you are good to go.

I am in the same camp as eat it. Assuming it did reach an IT of 160* and the smoker held at 180*, thus preventing the brisket from dropping below the 160* already achieved, everything should be peachy!

40°f to 140°f is the danger zone.

I don’t know how the brisket will turn out, but you should not get sick from eating it.

Great. Thanks. Quality wise I’m hoping it cruised through the stall overnight even at the lower temp. When I wound it back to 225 it climbed steady. Through 180 internal now.

Now I just have to survive telling the wife our lunch guests will have a later lunch than planned........

I'd eat it myself with no concern about food safety. Especially since you indicated you bumped it back up to an internal temperature of 180F.

Paranoia isn't always good. I'm not saying to leave stuff on a picnic table all day but, I've been known to leave a steak out on the counter overnight to ensure it was 'room temperature' when I cooked it with no adverse health effects ever. YMMV

As a side note, why do you think our European ancestors spiced meat so heavily in the days of wind and sail? (Can you say 'off' meat?)
