View Full Version : Humphrey's Long Weekender- First Cook

My new long weekender arrived on Monday, but I could not get it out of the crate until yesterday. Got it fired up around 5 and let it season until 11. Threw on a big pork butt, estimated where I should put the vents and went to sleep. I got the FB 500, but want to learn the cooker before relying on the fan.

Was aiming for 300 at the top which means the bottom was probably around 250. Woke up and the the door thermometer read 302 when I was aiming for 300...not too shabby.

It was running strong, but I wanted to start my game day cook so to be safe I added coals at 11 am (18 hours after lighting).

Threw in a pork belly, then ribs, then tri-tip, then wings. Goal was to have dinner ready at 6. I have three Humphrey's and this is by far my favorite one. Comes up to temp super fast and held rock solid temps.

I was joking with my buddy that I am the only person with "$9k in smokers I can't actually use." Basically because I donated my personal smoker and then leveraged our next smoker purchase to build out our bbq truck. The truck is parked far away, so cooking on one of them for work was a real pain in the ass. So we put our last job into this for my personal use!
