Those look fantastic. I actually saw a pack of them at the store last weekend and decided I wanted to give them a try this coming weekend.

Did you cook similar to spares and go until bendy and probe tender?

Did you cook similar to spares and go until bendy and probe tender?I cooked them unwrapped 3.5-4 hours at 250-275. I actually did check with a probe and grabbed the temp, they were about 200 in the thick part when I pulled them. Bend test probably would work too! Just didn't want to dry them out
