CINCHOUSE had a hankerin' for Banh Mi Dawgs, and we've been waiting for the Green Bay vs Chicago game all summer.

I picked up a pack of BIG Dawgs from the grocery. Big fan of these.

Pickled some carrots and cucumber in a brine of sugar, salt, and distilled white vinegar.

I saw Andy spiral-cut some hotdogs a few days ago, and it really intrigued me. I decided to copycat, and I really like the results.

The buns I thought were good.... weren't. :doh: So, I broke out some lightly toasted bread.

A quick schmear of Dukes Mayo (to help replicate the fattiness and moisture of the pate on a real banh mi sammich), then then spiral cut dawg, thinly sliced jalapeņo, the pickled veggies... (Doh! Forgot the cilantro, but we didn't seem to mind too much).

BossLady whipped up some "Love Dip" as found down in the Dallas area... and we're watching the game on the telly!

Those look great. I ran across something called the "slotdog" that seems to serve a similar purpose re: creating more surface area to crisp up. My wife has a "weird thing" about "texture" so I haven't bought one yet but...

I cooked some of those sliced up dogs a while back and they were good. Knife skills...

For a Chicago Char dog, you want to slice the ends like this

https://farm5.staticflickr.com/4137/34796430384_42eb5df64b_b.jpg

Because when you grill them up, they turn out like this. That's what you'll find at any dog joint if you ask for a char dog.

Then add all the other ingredients on top just like a regular dirty water dog.

Suds, those are some crazy dawgs, man! They look cool, but my skewer and a paring knife worked like a champ.

Norm, I love it, man. Personal stories and connections trump historic rivalry every day.

Rob, you got a little nutty with that paring knife, brother... but the dawgs sure look delicious!

Interesting, Andy... that's all it takes, eh? Just a quick cross on the ends...

Speaking of nutty, those just don't look right. No offence Andy but dang.

Nice dawgs! :clap2:

They kinda remind me of one of my favorite dishes, which is the Kogi dog from the Kogi trucks here, but the topping on those is kimchi.

Ain't no shame in a hotdog on bread - works just fine!

I personally prefer REALLY GOOD QUALITY dawgs, cooked till they got some black char on em,nestled in a cheap white, toasted bun,Frenches Musturd. I like the other variations too.Saurkraught,onions,chilli,cheese.No pickles for me please,I like them and peppers on the side.Relish/ ketchup,,,NEVER!!!

If this is the one (https://www.foodandwine.com/recipes/kogi-dogs), it sounds awesome!

Agreed, Hoss... but have you ever had a really good Banh Mi sandwich?

That's what this recipe is working to approximate and improve.

No Vietnamese places around here selling Banh Mi sammiches... but I can sure get my hands on hotdogs!

I love a good Chicago dog... I like the dicing of the dogs, thank god no ketchup, like one of my favorite places: no seats, NO KETCHUP, no pretense and no nonsense https://geneandjudes.com/about

Yall did a great job on the dogs!

And another great place for Chicago dogs, you guys that are not from around here might laugh but Vienna (the only hot dog brand) has a hall of fame and these guys are in it,I had lunch there today and it was great, $5.73 for two Chicago dogs wrapped in fries .... it was awesome!

Thanks Marc!

I lived in a small town until about 6, this young man was also courted by the White Socks but decided to play football. One of those kids growing up that was good at all sports and never looked down on us little ones. In my mind he was 6'6" 240#, have to look up and see whatever became of him. Thanks for bringing up the memories!

Yessir! I ate those every single Tuesday without fail for about 6-7 years when the truck would come by my work. Plus they have these chocolate sriracha bars & I'd order 5 of those at a time. Now there's a brick and mortar in my neighborhood which we make good use of. If you're ever out this way, we gotta hit that place. Farking amazing.

Interesting! I'm a big fan of banh mi. There's a place called Lee's Bakery on Buford Hwy in Atlanta that makes great banh mi sandwich. BBQ pork banh mi is only $3.50 and awesome. They're a bakery so they bake their own baguette. The secret to great banh mi is not the topping but the baguette. For anyone living in Atlanta or visiting, I highly recommend stopping at Lee's Bakery for some pork banh mi. You can also buy day old baguette bread there, 6 for $1.
