...was a lesson I learned early on in my passion for backyard cooking. To me, a beautiful mahogany is the most appealing color on meat... one that causes me to crave a bite. What about you... what color does it for you?

Todayís ribs... about 2-3 hours til done, but my eyes are already demanding a bite... lol.

Depends on the meat.
Chicken I like golden brown,
Ribs I like mahagony
Brisket and butts I like them to look like a meteorite lol

Here is some meteorites cooked on the Mak. Black means deep smoke flavor to me which I want on a thick cut of meat.

I like my ribs to be a sticky from sauce and mahagony. Some ribs on the Mak

I do agree with you though... chicken should be golden brown and black butts/briskets are very appealing to the eye :)

Gotta have that beautiful mahogany on the ribs, love sauce so it may darken it just a touch.
Chicken gotta have that golden crispy skin.
Butts and Briskets definitely black bark.

I go for dark on my Baby Back Ribs. But I reckon that is due to the sauce I paint with.
Yup, paint with. I put on layers and let them cook on.
They disappear, and get taken home. So I consider that a win.:rolleyes:

My chicken comes out more mahogany than my ribs do. :-D

Iíve done many a dark ribs like you are describing. Totally agree... they are yum!! Thereís just something about mahogany ribs that grabs my attention every time :)

Hi Great color on the ribs. I've trying to get that mahogany color on my ribs for a looong time. My Ribs always come dark with a bark, never close to mahogany, like your did.

It came to me that I think I eat with my nose first.
Then I let my eyes find the source of the great aromas.
Maybe that's why our nose is between our eyes, and not where our ears are?

Kansas City championship and Bone Sucking sauce rub, cooked at 225į until the bark set, wrapped in butcher paper with butter, brush of apple juice to dampen them up, small amount of brown sugar, then back on at 225 for about 30 mins before unwrapping.

I wanted these to look purdy. Out of the butcher paper then back on naked to brush the sauce on, hit the sauce with my Searzall to congeal and brown it up a bit, then finally topped it all off with the crushed peppercorns.

Hmm...I have a Searzall and have never thought about using it to set up or caramelize sauce. Good idea.
