Early tee time but planning to have spare ribs for lunch. Contemplated briefly lighting the SOB and letting it run while playing a quick 18. Wife said her Mother used to start them in the oven. Sometimes finish them or her dad would finish on their Weber Kettle. We never cooked ribs growing up. Anyway into the oven tightly wrapped in foil and set oven at 265*. We were first tee time and home in about 3 hours. Fired up the SOB and they’re finishing outside.

The Lucky Part. A large outdoor cloth umbrella had caught a gust and was laying on the firebox end of the SOB. I don’t know if it would have caught fire at 300* or not. Reckon I’ll never know as it wasn’t lit. I thought about it, but didn’t. And won’t

You're every bit as good as you are lucky. You kill it every time.

Cook looks great Adams. I really wish I had a consistent source for purple potatoes, I'm lucky if I get them more than twice a year.
