Had family in town this week and used it as an opportunity to have a couple cooks.
Brisket, whole lamb belly/ribs & pork ribs. Of course there had to be some pickled reds. Sides were smoker beans and mac and cheese. The pulled lamb was a huge hit.

I made a mint chimichurri to go with grilled lamb chops... haven't had mint jelly in ages! Really starting to love smoked lamb.

yeah, it was the belly & ribs in the last pic, about 5 pounds that I smoked until pullable. It's fatty so it renders down nicely and stays extremely juicy.
