I was recently talking to a dear friend about chickenfried steaks. Couldn't get it out of my thoughts, so I had to make one!
I usually use round steak but didn't have one on hand. I did have a ribeye though.

I "gently" pounded the ribeye to the thickness I wanted..

https://i.imgur.com/U6AIRWB.jpg

seasoned up some flour with corn starch, granulated garlic, onion powder, cayenne, cracked black pepper, coarse salt, I think that was it.

https://i.imgur.com/HWkU3mo.jpg

Dredged the steak in the seasoned flour, then into the egg/milk bath.

back into the seasoned flour...

another bath...

Then into the seasoned flour with a bit of panko bread crumbs added...
I used my fingers to press the panko, seasoned flour onto the steak..

https://i.imgur.com/bqxIXBX.jpg

Then let it rest while I prepped the tatoes n biscuits..

https://i.imgur.com/5C0ersm.jpg

I started the tatoes with onions first, also the pan of biscuits...

https://i.imgur.com/OQ0G8g1.jpg

moved the biscuits to the top shelf and let em bake...

https://i.imgur.com/Q8b4UEB.jpg

heated the oil for the steak...

I went with one of the big skillets. I think it's 15 1/2"....

https://i.imgur.com/G9tugSu.jpg

https://i.imgur.com/wo4BRd0.jpg

saved some of the skillet drippin's for the gravy...

https://i.imgur.com/tw8VEh4.jpg

flipped my biscuits over to brown on top, and added a skillet of eggs...

https://i.imgur.com/REhxUVu.jpg

I set the tatoe skillet on top, to "set" the eggs...

https://i.imgur.com/WXfPDvX.jpg

https://i.imgur.com/p77yVMy.jpg

everything's pretty much ready.

Breakfast. Chickenfried steak, skillet gravy, fried tatoes n onions, eggs, biscuit with wild sandhill plum jelly...

https://i.imgur.com/RBYBqbT.jpg

https://i.imgur.com/YNAzwwI.jpg

poured some of the gravy over top and called er good.

https://i.imgur.com/eeYBqBs.jpg

I sliced a piece off that was hanging over the edge of the plate. lol It was the first thing to go.

Even though the steak was big enough to feed me for 2 days, I enjoyed it. :-D
I think it might be the best chickenfried steak I've had in awhile. lol

Thanks for looking!

Thanks so much Dom! I judge a diner by their chickenfried steaks and their catfish. If they can't make those, I don't go back. :-D

I've tried to make it a few times, in a deep fryer and it turned out okay. I may have to try again, using this thread.

Don't knock it till you try it. In New Mexico we put green chile on just about every thing.

Well done Mam, that looks amazing. Can you tell a difference with a rib-eye and if so what is it? I want to try this so bad!
Thank you Craig! Yes, I could tell the difference in texture. Most chickenfried steaks have a bit of a tug to them, they are fork tender but still have some "chew". This ribyeye was melt in your mouth tender. I really liked it.

I don't measure the seasoned flour ingredients. I usually start with 2 cups of flour, then start tossing things in. When the "color" looks right, I put a pinch of the flour on my tongue and give it the taste test. Adjust salt, cayenne, etc., accordingly.

Hope you have great luck with it!

Thanks again everyone! :-D

I do enjoy green chile on just about everything, but wanted to go with skillet gravy this time. I had the "jelly free" half of the biscuit in mind to dip into the gravy bowl. lol

I really love green chile sauce with huevos rancheros! :-D

Sandra will cook CFS about twice a year and will mention to her about using a ribeye.

I always said the main reason to hunt deer was CFS from the backstrap. It's been a few years since I've last hunted so maybe the ribeye idea will be a good substitute.
