My work schedule changed, I now have Phriday and Sat. oph, so I am sure I can come up with something. I have pork ribs in the phreezer, so that sounds as good as anything. Have a saphe and phun weekend, Phu and brethren.

One place (Brookshire's) has Hormel butts on sale for $0.99, so I will probably pick up a couple to eat and make freezer packs of pulled pork.

Heat index approaching 110* thru the weekend. Watched a Harry Soo video on brisket last night where 4-6 hours in smoke, wrapped in butcher paper and foil and said finish in the oven. I may stop by store after golf and buy a small container of celery seed. I’ve got a brisket almost ready to go. Oven finished brisket. Is that as big a Q-Crime as Boxed Gumbo mix??

Got a busy one coming. Brisket, butts, pork loin, few spare ribs, some beef ribs and a few lamb neck.... oh and a case of spatched chicken. Should be interesting

Tonight will be some 2" thick pig chops, seared in a CI skillet, then into the oven.

I lucked into a Sams Club yellow tag pre inventory mini hoard the other day so the vac sealer was burning sacks and suckin hard! MEATSTOCK 50 started on Thursday when Mac& cheese opened for BPS Jallelujah bacon rub wings. After last nights heavy downpour Yasgars farm is really under water so I’m busting out the Country Joe fish tacos. Saturday, making a much unannounced appearance, Meatloaf will headline on the main grill. Closing Meatstock the grand finale’. We’re gonna smoke some pot roast man. Meatstock 2019 is gonna be phar out!

Happy Phriday all Pharkers, hope you have a Phantastic weekend.

My plan for this weekend is to smoke a pork butt for a coworker and to do 1/2 a butt in some mojo marinade to make cuban sandwiches. Going to do some smash burgers for lunch tomorrow.

Meat sale at Valli! I picked up a couple racks of spares. They were St. Louis trimmed and they included the tips (wrapped into ribs.) I trimmed them a little more and just put all on the 26" (68cm I think) kettle a couple minutes ago. They also had some small pork butts (~5lb, 2 1/4kg) bone in. I might fire up the 14" WSM for them.

So far the plan is get 2 butts for pulled pork and a big pork belly for burnt ends. This is a request from my son who leaves for boot camp in a week and half....

Family get-together on Sunday, but I'm keeping it simple with ribs, wings, burgers and dogs. :-D

I'm going to try to make time to fire up the new (to me) smoker on Sunday. Since it will be my first cook on it I'll probably do a a butt since they're so forgiving.

CINCHOUSE just requested some sort of roasted Green Chile stuffed w/ Chorizo and Cheese (idea she got from a Pintrest thing or FaceBook... or something. I'll MSU.

I need to smoke another fatty to replace the one that's fed me via several early morning breakfast sammiches this week.

Maybe I can squeeze a rack of ribs or something in there, too.

Hey Dr Phu and all you smokin ember heads!.....Got a gig tonight and babysitting grand dogs and horses (no laughing cowgirl!!!!) plus we are in the middle of Middle Mississippi August otherwise known as Hell on earth so motivation is low.....smoke on dudes and dudettes!!!

They were tasty but not particularly meaty. I guess that's what I get with ribs on sale. The butts were a little meatier but finished when it was starting to get dark so no picture of them.

Put some marinaded pork loins on the PBC that was well received. But what got rave reviews was the hot onion dip and the maple apple crisp off the weber.

Weekend's not over yet, is it? Well... probably Monday somewhere in the world, but not here. I made some grilled chicken and Caesar salad for dinner. Not a terriffic amount of smoke involved and definitely not BBQ, but it still involved charcoal and a Weber. :wink:
