View Full Version : Grilled Spaghetti Squash

The Mrs and I are working to get back to our healthier lifestyle. Having lost over 50 pounds on Weight Watchers a few years back it's been difficult seeing it creep back on (in the interest of keeping my marriage intact I won't disclose her loss). :razz:

Earlier today I posted a healthier snack alternative in the form of roasted chickpeas, which is a WW snack. Since I had the Weber fired up and had bought a Spaghetti Squash this weekend to be a main dinner this week, tonite was a good nite for it. This is of course a tasty, low cal, zero WW points alternative to a plate of spaghetti.

Sometimes I've roasted the squash in the oven if I'm not in the mood to light a grill and that's a fine way to prep this dish. The flavor introduced from grilling indirect over charcoal is a nice touch.

Halve the spaghetti squash, remove seeds and stringy pulp. Apply EVOO, salt and pepper and place out on the grill flesh side down, indirect. If making this indoors, place flesh side down on a parchment lined baking sheet in a 400 deg oven.

I had already taken one off when I realized I should take some pics, but after an hour or so on the Weber it looks like this -

Scoop out the squash, which comes off in long strands, with a fork. Serve with tomato sauce. I also grilled a few Al Fresco chicken sausages to go with this.

That's it. Quite simple, very filling and tasted excellent, especially since it was prepared on the grill.

After a week of being back on tracking points with Weight Watchers, my weight is back down and I'm heading in the right direction.

Looks great!

I recently cooked spaghetti squash for the first time on the an open fire grill and thought it was very tasty. Yours looks superb!

Ok, that looks good, and if you say it is, I'm going to give this a try.
We are not ww members but could easily stand to lose a few lbs. Carrying unneeded, unwanted unhealthy stuff around is just a lot of extra work. Who needs that?

It's great too if you fill the cavity with marinara right before it's finished. Just kind of use the squash as the bowl, and eat it right out of the skin.

Good luck brother.Cauliflower and squash like that ,,,,I just cannot make it edible ,for me,without toppings that negate the benefit.I salute your will power.
