Recently seen few videos of people dredging wings in corn starch to give skin nice crunch, do decided give it try
Dredged wings in corn starch seasoned with salt, pepper, garlic
Coated dredged wings with r butts are smoking spicey rub
Smoked over hickory/cherry for 45
Glazed with Carolina BBQ sauce and let set
Served with homemade ice box pickles
Wings definitely had crunchier skin. Not same as fried, but good. Not much effort, will definitely try with buffalo sauce

Cornstarch sounds interesting. How long did you air dry the skin in the fridge?
I use baking powder and salt, and the drying time is 24 hours minimum and 30 hours is even better. 1t baking powder + 1/2t kosher salt per pound of wings. Adding garlic powder or pepper is fine. All of these wings are cooked at 450°, not fried.

Not long, I patted dry and let sit for about 40 minutes while grill was getting ready
Next time, I'll give more time and see if that changes.
They were pretty tasty as is though with decent crunch

I use a seasoned flour, but cornstarch is a good idea too!
I think when you sauced them, they lost the crispiness you could have gotten.
Try cooking them dry, then toss them in a sauce just before serving

Agreed, I would do that differently next time
Probably just mix rub in better with corn starch too
