Walked in to Costco Business a couple weeks back and saw Morton's black Angus corned brisket flats on clearance :clap2:

Briskets up the ying yang too. Choice, Prime you name it. Tempting but I have to room plus I have some Creesktones in the freezer still

To draw out some of the salt. Too salty when smoking out of the package since it's corned beef (same cure for pastrami). Change the water a few times too. 1-2 days depending what you like.

Suppose it's a good problem to have but I tend to grab a bunch of things and not being able to smoke/cook them for a while.

Dank and sticky in liquid form for me but I hear ya Josh. :mrgreen: :thumb:

The pastrami looks good, Sako... but with those rolls... I'd fight someone for one of those sammiches.

Thanks brother! Yea no complaints at 1.99 for angus flats and literally no waste. Just soak and toss on the smoker. I vac packed the other two. One will go to my bro and one for me to use later.

You're talking to a single guy, with 2 deep freezes. I know the problem. Been doing my best to cook from them, instead of buying new. It's just so hard to pass up a bargain.

Sako - Looking great as always!!! I've been very envious from your posts showing all the cool things you can buy at your business center, and Costco recently announced that the first Business Center in Texas will open in a former Sam's Club on the North side of Dallas, and I can't wait!

Thanks Bacchus! You're in for a treat. They have a lot of cool stuff that's unavailable at the regular clubs like, duck, lamb, goat, pigs, whole or butchered, whole turkey breasts, tons of brisket, short ribs, pork belly skin on or off, ribs with brisket bone off or STL, or half racks, riblets, butts for $1/lb....List goes on. It's a Q'ers paradise.

That looks delicious minus the yellow mustard. Pastrami must have spicy brown deli mustard or other varietys of brown mustard.

I hear you Candice but a few diners here serve it with plain yellow mustard. I love the combo even though I do love deli mustard, stone ground mustard, brown mustard.....even hot Ruski mustard.

One of my favorites which i am not sure if its a local region brand or not is Polana. They sell really good mustard. One of my favorites was the spicy brown beer mustard. They also sell a horseradish brown mustard but i cant seem to find it anymore.

Edit: The Horseradish spicy brown mustard was Pilsudski, but that Spicy brown beer mustard is just as good. Great on Cabot habanero cheddar cheese.

I got four jars of the Pilsudski coming my way. Can't wait to try on pastrami.

Its good stuff. You wont be dissapointed. You might want to kick it up a notch with some extra grated (in the refridgerated section) Horseradish to add that extra kick, and fresh taste. For the Pilsudski, i like to add a 1/4 tsp to 1 tsp of Pilsudski. Its a addicting, you might not beable to stop.

Followed Shadowdrivers lead and used thirdeye's recipe. Good stuff.

I know they have Wagyu briskets in Texas. I'm trying to get Wagyu briskets in North Jersey's Costco's Business Center.

Another fantastic looking post Sako. I didn't stock up after St. Patty's Day this year because the supermarket sale prices weren't that good. Now you have me wishing I did. Now no room in the freezer. Full of racks of spares I got at .99c # a few weeks back. Not a bad problem to have!

Thanks Marty! Absolutely agree. Supermarkets charge a premium for flats, at least around me so this was a score. I don't care for points when it comes to pastrami.
