My daughter called me up and wanted to know if I could cook pulled pork for a wedding, I said sure no problem, than I ask about how many people, she said around 260 people I thought OMG. My offset smoker will only hold 6 pork butts at a time i calculated I needed to cook about 18 of them. So what i did which work out well is starting on Wednesday I put them in the smoker at 4pm than pulled them off at 10pm, tripled wrapped them in tin foil and placed them in 3 roaster oven set the temp at 210 pulled them out at 8am put them in the cooler for 2 hours than pulled the did this for 3 days. Also made 2 gallons of st Louis sauce and 1 gallon of Carolina sauce. Feed everyone with just a little left over. With no complaints.
