It's been ages since I posted a cook, just got out of the habit and new ways to learn.
This how we Iowegians pick out our pork T-bone chops!

Gave 'em a rub of lime juice and salt, let 'em set for awhile and then pepper and garlic.

Put 'em on the performer indirect, let 'em melt inside.

Pink is OK as long as you remember to hit that 165 mark.
(Or was it 145?) I forget.

I was raised on burned food. My Mom could burn water.
So I always murder my Pork. Cook it to white inside.
Just the way I like it.
Your post made me go get out a piece of Pork Loin and set up my Sous Vide.
Pork roast tonight! :clap2:
