i have an assassin 36 but it doesn't have a v pan. i was wondering if anyone has used one with the v pan and how it works? i was also wondering if any one has a good charcoal layout for the assassin grill.

V Pan is for smoking for guys who don't like Water pans.

The v-pan works really well. I use it whenever I'm smoking. So ribs, butts, brisket. On a really long cook you might have to swap it around. One end is slatted and can expose meats to flames but it's no biggie. I'm normally not cooking to capacity so I just move meats out of the way when the burn gets to them.

I split my charcoal basket long ways with 2" angle iron set down the middle. One run up, one run back. I get at least 10 hours at 240 like that. Wood chunks and briquettes.

Thanks Smitty and to the original poster the V-Pan is a must have option for if you want to smoke instead of grilling .

jesseQ thats what I'm trying to figure out, how can you put anything over the slatted openings? I am going to fill it up full for sure. i think i saw a guy put aluminum foil over the openings but does that ruin the purpose of it? i just don't want to scorch the meat.

Jbone3653, what are trying to cook? I have a 36. I pretty much always use a V-pan. The exception is when I have non-thick cut steak, I move the charcoal pan to the V-pan height, and quick sear on both sides.

Charcoal arrangement will depend on what your cooking and how many/much. I've yet to feel the need to completely fill the charcoal tray (Max of me has been one lit full weber chimney with 2 more unlit on the tray. I believe it will hold two more chimneys (total of 5, maybe 6)). For direct hot, say whole chicken or hamburgers, I just pile the charcoal under the slotted side and cook directly above. I don't notice much of a temp. difference, but the V-pan acts as a diffuser for dripping grease.

For long cooks (butts/brisket/clod) I utilize a snake with no divider. Although I consulted BBQFreak's video and it would be helpful to add some square tubing as it does jump if charcoal placement isn't perfect.

when the charcoal gets close to the slots put some gloves on and flip it going the other direction or go bigger . :wink:
