A local Mexican restaurant makes fairly tasty Caldo de res (beef soup), but I ran across some nice looking beef ribs and wanted to make a pot at home.

The beef short ribs...

picked up some corn...

https://i.imgur.com/hF3p0ro.jpg

started by lightly smoking the beef ribs and onions in the drum..

https://i.imgur.com/rsANbE7.jpg

then added a pot of tatoes, garlic and beef stock to the drum..

https://i.imgur.com/6JfQvYX.jpg

when the beef ribs had enough smoke and color, I added them to the pot of tatoes.. and let em go til tender...

The ribs were nice and tender...

Next came the cabbage...

corn and summer squash.. (cause I had the squash on hand)

https://i.imgur.com/u5JinZf.jpg

I let them simmer til tender...

https://i.imgur.com/SGqZsf5.jpg

added cilantro, salt, pepper, a bit of mexican oregano, I think that was about it.

topped with onions and supper was ready.

The rib meat was tender and the broth came out very rich.
I hit it with some fresh squeezed lime juice and chili lime hot sauce..

The pot took on the smoke well, I was happy with the outcome. I'll be making it again in the future.

Thanks for looking!

Thanks Ron! It came out richer than the restaurant's but I don't think they use beef short ribs.

I bet you're right Ron, I think they might use shank. The meat isn't very tender but their soup is tasty.

Thanks Greg! It was pretty flavorful. The restaurant adds cooked carrots to theirs but I don't really like them cooked. lol

Wonderful looking cook and presentation Jeanie, thank you for sharing.

I'm always amazed at how clean your Cowgirl grate is, looks like a new grate every cook and always wanted to ask if it's plate steel or cast iron?

A bowl sure would calm the stormy winds.

Thank you Kevin! The grate is made from 3/16" steel. I treat it like cast iron though. I brush it off, heat it up and oil it while it's hot to keep the seasoning going. I really love the thing!
It's taken from a pic of me sitting in my camp chair by the fire. This is it when it was new.

Thanks Adams! It's really whippin' today! Rocks in my pockets aren't handling it. lol So far I've lost two tables from the back deck. I'll wait til tomorrow to see what damage has been done.
Hope you're not golfing! lol

Thank you Hawkeye! The broth at the local restaurant is on the thin side too. I think the smoked beef ribs and beef broth added a lot of flavor to the pot. Hope you make it sometime!

Love the colors, especially as we consider easing into Spring (though it snowed here a bit this morning ).
