Really wanted to do some lamb this weekend so I decided to smoke it first then braise it in beer / beef stock liquid. Cant complain one bit (and plenty of leftovers).

It was unreal - going to have some Lamb Tacos tonight with the leftovers!

awesome. we've been doing lamb shanks a couple times a month lately. ive been doing them sous vide for a day+, then tossing in the fridge to firm up the day we want to eat before finishing on the egg or kettle with some smoke.
