Fired up the Lone Star. Still learning it, yesterday was my best cook for fire management.

I cooked two racks for a family, they wanted them sauced.

Those look fantastic! Looks like you are getting things figured out just fine! How often are you finding you have to feed it a stick?

I wanted to time it and forgot. I think I add them to soon. That's why my temps got away from me once. I get worried about looking my bed coals. Happened to me on other cooks so that makes me add sticks to soon. My sticks were smaller. It looks like my nice bed of coals is on under the grate. It's almost like to much falls through the fire grate.

Looks great but what is in a pig shot? The bacon is obvious but I have no idea what it's wrapped around.

It's kielbasa wrapped in bacon. Make sure you slice small enough to have room for your cheese. This time I mixed cream cheese and chipotle cheddar. Used my home made pork rub.

You could go to a fab shop or scrap yard and get a piece of expanded metal like your cook grates and lay on top of the fire grate to help keep the coals up. That's what I use in my wood stove. When it burns up, I throw it in the recycling pile and get a new piece. I've yet to pay for any of mine.

Great looking food.

Yup as already mentioned get a piece of expanded metal (like your cooking grates) and lay on top of your firebox grate. Most ACE Hardware Stores sell smaller pieces of expanded metal and usually will cut them down for little or no charge.

You can't Q till you can manage the fire. If you can't manage the fire you can't cook.

Once you get it right after that it's like riding a bike.
