View Full Version : My first kettle!

BKING!

My first kettle and it’s a 26! I got some fire bricks too. They are 9 inches long, 4.5 inches wide and 1.5 inches thick. I suspect the sear zone in the center will be what I use most. Should bring the coals within an inch of the grate.
I did lose a screw for the handle or perhaps one wasn’t packed???

Congrats!!!!! Love the 1st pic w/ the fire bricks. You can build an inferno in that enclosed area :)

Look forward to seeing more and hearing whatcha think. Soooo, briquettes or lump?

Oh yeah, no chips or scratches in the porcelain finish? Does the lid seem to be round and true? What are your initial impressions?

It’s crazy how hot this thing gets. This tiny fire got the kettle to 500+ deg in 30 deg temps. I used a single starter cube and it took 45 minutes. I’ll probably use a 1 or 2 chimney starters next time to get it there a lot quicker. I wasn’t a big fan of the central sear station. It felt cramped when searing the 3 burgers. I’ll probably use the 1/3 direct, 2/3 indirect setup next time to see how that does. Oh and funny thing is this set up gave more searing power than my kamado lol. It was pretty insane.

The searing power is intense for sure! One big difference between the kettle and kamado is how easy it is to get the fire within an inch of the food whereas a kamados fire is often “inches” from the food. My guess is, if you like 2 zone cooking, you’ll probably prefer the 1/3 - 2/3 setup over the bricks for most of your 2 zone cooking.

Depends on how fatty the meats are... things like wings I use foil. Most things I do not though. If it’ll make for considerably easier cleanup, ill use foil. To each his own :)

I don't foil.
I use mine often enough in different configurations that any excess grease gets burned off the next cook.
Most is just absorbed into whatever ash is in the bottom of the kettle.

I don’t think I would. I used to think it would be sufficient but I need more searing room. I appreciate my Mak flame zone so much more now for that reason for the greater grilling area. Besides I’d put my central searing station on my kettle up against a Memphis any day. I put the burger over the searing station and the sound of the searing heat engulfing the burger sounded like something I’ve never heard before. I’m not being critical of the Memphis by the way. I love their grills. It’s just hard to compete with lump charcoal 1 inch from the food. They’ve come incredibly close though.

That’s pretty much the conclusion I have come to... every time I’ve had the itch to buy a pellet cooker with an intense sear zone... I go back to my pencil/paper and draw out the pros/cons of that setup vs. something like the MAK. The larger sear/grill zone wins every time for MY needs :)

I use AL pans, hosed off after the cook, then turned upside down over the spread out coals after I'm done cooking and have shut down the vents. If I'm collecting the drippings, I use new pans.

One drawback to the 26 kettles that I hear others discuss is that there are not as many accessories available as there are for the 22’s. That said, there are still some great add-ons, and to be honest I haven’t felt deprived as in I am missing out on something that is only available for the 22”.

Here’s one that I have sure been tempted on more than one occasion to buy. So far I have held strong :)

These are pavers, which is why they are so thick. If you have a circular saw, they sell masonry blades for less than 4 bucks. Cut a kerf on both sides and tap with a hammer.

Almost four decades of kettle cooking, and I've never had a grease fire.

I cook lot of chicken wings Vortex style. After about 3 or 4 batches of Vortex wings, there's usually good bit of grease drippings inside the kettle. When this happens, I just light the grease and let it burn off. The fire cleans and sanitizes everything quite nicely.

Move the firebricks more towards the middle. One of the advantages of using firebricks. I've used mine to refine most of these arrangements.

Personally I’ve come to prefer the sear and slide method on my kettle. Get a rip roaring fire, give the meat a good sear and move to indirect heat, cutting the vents way back. Yes, it’s not like the reverse sear where it sits at low n slow temps for a long period of time, but I have come to like the sear better, the fact I don’t ever overshoot my desired internal temp with a sear at the end AND the fact that my cooks (especially weeknights) move along quickly. If I do want to go with the reverse sear, I almost always do the low n slow portion on my MAK, and fire up a chimney of lump when the internal temp is getting close to the sear stage. It’s soooo easy and relaxing doing it that way :)

That would make it much quicker for sure. I have a couple chimneys so I could be grilling in 15-20 minutes

Just had an interesting conversation with a representative from Weber's Customer "Service". After chatting with another member and doing some reading I have decided to do a "mini Ranch" build on my 26" kettle. But...when I called Weber, the rep that I talked to refused to sell me the parts because I was honest and told her what I planned to do - her response is that they "will not sell you these parts unless you own a Ranch kettle and can give me the serial number." I guess that I'll need to find a different supplier, but it really kind of rubbed me the wrong way. I just figured that parts are parts and how I use them was my business, but apparently Weber doesn't share that view.

I just figured that parts are parts and how I use them was my business, but apparently Weber doesn't share that view.

seakuv,

Just call back and talk to another CSR. Sounds like that person is kind of new. FWIW, Weber has a policy to only sell a person parts to a grill they own, but that's to try and limit having wrong parts ordered or sent out. Like, they wouldn't want to send you burner tubes that didn't fit. Stuff like that creates a lot of headaches and possibly, some liabilities.

Some CSR's take that as absolute gospel and won't dare deviate from it. Others understand the reasoning, in in cases like your's, they ignore it and will sell you the parts.

If you run into trouble, holler at me and I'll help you get what you need.

Hey Thanks, Demosthenes. As a firm believer in, and practitioner of, the ancient art of cat skinning (aka - There's more than one way to skin a cat.), I got everything ordered and will hopefully be improving an otherwise excellent 26" kettle even further in the not-too-distant future. I can understand that companies have policies and that employees have to follow them, but I do not like dealing with people or companies that feel that they have the authority/responsibility to "protect me from myself". The contrarion part of me will derive great pleasure in modifying this grill counter to Weber's policy. AND, I'll have a better grill! :becky:

And you’ll take us along the journey step by step w/ pics? What’s the cost of this project?

Cool. Congrats! Can't wait to see how it turns out. Holler if you need anything.

As for Weber, it's not only to protect you against yourself, but it's to protect them in a number of ways as well. By ensuring that the parts ordered actually fit your grill, they eliminate a lot of return of parts, as well as the handling and shipping costs associated with that.

It's actually a pretty smart policy all things considered. It's just that employees need to be taught that it doesn't always need to be enforced.

Prices have probably changed, but when I did mine, I was into it for around $150. BUT, that cost includes extra parts (a Ranch handle to cut down and put on the front), plus I paid for Weber hardware instead of going up to HD and getting SS washers, nuts and bolts.

Heck, here's the parts list with the prices I paid at the time:

Qty Part # Product Name
1 85740 Top frame for Ranch Kettle, Painted $45.43
1 85750 Bottom frame for Ranch Kettle, Painted $45.73
1 85725 Axle for Ranch Kettle 32.37" , ~$10
2 6414 Locking caster, Genesis/Performer/Ranch/Platinum ~$5-6 ea.
1 987101 Replacement hubcaps (pack of 3) <$4.00
4 87417 Aluminum tubing plug for Ranch Kettle $5 ea., $20 for 4

An optional part would be the front handle of the RK. I haven't seen anyone else put one on, but I will be as it should add needed stability to my build. I'm attempting to do a complete "drop in" solution where I won't have to drill any holes into the kettle itself. It's proving to be a bit tricky :-)

Anyways, the front handle is part #85730.

I should add that just about none of the parts above include "hardware", i.e. nuts, washers or bolts. It's your choice whether you want to get them from Weber or from the local hardware store, the latter being the best option if you want to go with stainless steel hardware.

Here are those parts:

1 87410 Hex head screw, 1/4-20 x 3 inch, black < ---- Center "pin" joining the two lower frame sections.
4 4086938 Hexhead bolt 1/4-20 x 1 3/4 inch < ----- Bolts the front handle to the frame
5 87503 Hex nut 1/4-20 inch, zinc <---- fits all the bolts.
10 87403 1/4" Flat nylon washer, black < ------ used on all the bolts

(If you don't do the front handle, then you only need 1 hex nut and 2 washers.

Pics and process will be recorded. Total cost of parts - $260. Basically Demosthenes' list from above but including the handle. Misc nuts and bolts I'll get at the local hardware store. It was more than I wanted to spend, but once they told me that I COULDN'T do it, well, that just ensured that it was going to happen no matter what...

I ended up ordering parts through ereplacementparts.com. My second call to Weber netted the same result even after speaking to a supervisor. I'm usually pretty good at garnering cooperation from people - but today wasn't my day with Weber.

I bought my first one today too. Got the 22 on clearance for $40. Box was beat up. I'll open that booger up tomorrow. I considered trying to exchange it if it is too out of shape, but I think that could be immoral.
