This is for the Humphreys guys using firebricks in the water pan. I have a BB and up until now have used only water. What are some of the advantages/ disadvantages of using bricks compared to water?

You save fuel by not boiling water. Less mess to clean up. I never use water in any cooker.

I usually cook in the 275-325 range. Recovery is very quick with the firebricks.

I could maybe see wanting to use water if you cooked everything at 225, but even then I would probably still opt for fire bricks.
