I am having a few friends over tonight and have a prime brisket chugging away and and I also have two wholes chickens going on in a few hours. I can’t decide how to cook the chickens. I am not much of a chicken fan so I have never smoked one before.

I know quartered will cook the fastest follower by spatchcock but is there any advantage to whole?

Appearance. I spatchcock all my whole birds that are not rotisseried.

I love to either spatchcock or or even cut in half. If you are cooking offset, face the breasts towards the oncoming smoke, and if going on direct heat, the spatchcock keeps the meat away from the direct flame.

I spatchcock all of my birds. I personally prefer to cook them all that way.
More even cooking.

I spatch every piece of bird. It stays more moist and cooks in about the same amount of time. Good luck. Try to get more familiar with your poultry. Some folks won’t eat pork or beef all the time.
