Today is the municipal election day and a day off from work.
So I took my new Anova for a first cook.
Two nice strip steaks

Lightly added salt pepper garlic powder and dry thyme. Vacuumed

An hour in the Anova

And then seared with some oil and coffee

Made a quick paste with chestnut sauce to go along.

It came out very juicy and tender. But I miss the smoke flavor from low and slow smoking. Its a lot easier them running a smoker but not much faster. I'll give it some more tries before my verdict.

Having a day off for municipal elections is a new thing here. But election to our parliament - The Knesset - and prime minister was a free day as far as I remember. I assumed it was like this everywhere.

For me, the best thing about using it has been to add flexibility into the timing of dinner when I have something else going on (waiting on guests etc). There have been a number of times when it wasn't easy to start a traditional approach when I'd need to or ended up pushing back dinner after I'd started cooking. With the Anova I can start things early knowing I have a couple hour window where everything will come out great. It's kinda the steak version of shooting to finish a brisket early knowing you have a big window while it's resting in a cooler to ensure it's ready when you want to eat.

I agree. Also it's a lot less work. No starting or tending a fire.

I've found that if you use wood for the fire for the sear, not charcoal, you can get that smoke flavor back.

Good idea. I was at a dinner last night. The host made sous vide duck legs. He smoked them before the sous vide. They were very good. I've thought you shouldn't do that bit I guess it's also a good way to cook.
