I started with this shoulder

and then cut it up three different ways (into 1/2" slices, 1" pork steaks, and strips which haven't been cooked yet)

Grabbed some other ingredients to prepare a marinade

for the thin pork shoulder slices

Grilled the pork on the Hasty Bake

and the finished Vietnamese Lemongrass Pork (Thit Heo Nuong Xa)

On another day a couple of the pork steaks went onto the Small Egg for a slow cook

It was a Dr BBQ recipe for "Tender and Tasty Pork Steaks" which was an accurate description
